Heart Healthy Dr Broth Grain Super Salad

Heart Healthy and nutritious

You will need:

½ cup Pearl Barley

1 x 750ml Tub of Dr Broth Roast Chicken Bone Broth ½ cup brown rice ½ cup quinoa

1 cup of chopped tomato

1 cup toasted or chopped tomatoes

1 TBLS toasted flax seeds

2 TBLS EVOO

2 Cups Baby Spinach leaves

Salt and pepper

Juice of a lemon

1 avocado

Crumbled feta

Method:

Simmer the barley in 1 cup of bone broth and half a cup of water until tender.

Remove to a large mixing bowl.

Simmer the brown rice in 1 cup of Dr Broth Bone broth until tender and add to the barley.

Simmer the quinoa in 1 cup of Dr Broth Bone Broth until soft and add to the bowl.

Stir everything together and let cool to room temperature.

Gently mix the tomatoes, almonds, flax seeds, and spinach.

Taste if you need some more seasoning and add if necessary.

Stir in the olive oil and lemon juice. Enjoy with the avocado sliced up and crumbled feta.

Keep in the fridge for a light lunch or serve with roast chicken or lamb or even grilled fresh fish.
