Black or Forbidden rice is healthy and has a lovely nutty taste, with this recipe it be served hot or cold.
You will need:
1 750ml tub Dr Broth Roast Chicken Bone Broth
1 cup black rice – rinsed.
Juice of 1 fresh lime
Splash off fish sauce (optional)
A few thinly sliced carrot and snap peas
Toasted almond flakes
In a medium saucepan simmer the black rice in the Dr Broth Bone Broth until the rice is soft and all the broth has been absorbed.
Carefully stir it and add the lime juice and the fish sauce.
Allow to cool for a few minutes before stirring in the carrots and the snap peas.
Sprinkle over the toasted almonds and serve.
Serve with some shredded chicken and crumbled feta for a great summer salad. Black rice is available from most Chinese produce stores.
