Packed with vitamin C this is the perfect winter soup!
You will need:
2 heads of broccoli
1 750ml Dr Broth Roast Chicken Bone Broth
2 medium onions – chopped
1 tbls chopped garlic
1 cup cream
Handful of spinach leaves
1 medium potato peeled and chopped
Salt and pepper
2 tbls extra virgin olive oil
Trim the head off the broccoli and chop them up finely, set aside.
Chop the stalk of the broccoli
In a medium saucepan over medium heat, sauté the chopped garlic in the olive oil until golden brown.
Add the onions and fry for a further 2 minutes then add the chopped broccoli stalks, the chopped potato and pinch of salt.
Sweat it all for about 5 minutes and pour in the Dr Broth Chicken bone broth.
Simmer for about 30 minutes then pour in the cream
When the cream is simmering, stir in the chopped broccoli head and stir it through.
When the soup is back to a simmer, switch off the heat and stir in the spinach leaves.
Blend using a stick blender or a bar blender, being careful with the hot liquid.
Garnish as you prefer.
