This coconut and beef masala curry will have you coming back for seconds.
You will need:
2 cups Dr Broth Beef Bone Broth
1 kg stewing beef (shin is great) cut into cubes
2 tbls masala powder
1 cup chopped tomatoes
1 tsp grated ginger – about a thumb sized piece
1 tin coconut milk (look for the most natural coconut milk you can find as the often are full of additives and preservatives)
Salt,pepper, lemon juice, olive oil
Fresh chopped coriander
In a thick bottomed saucepan on the stove, fry the beef with some salt and pepper I and splash of olive oil until nicely browned.
Carefully stir in the curry powder and let it toast for a few seconds.
Add the tomatoes, grated ginger and another small pinch of salt.
Add the bone broth and simmer until the liquid has evaporated by at least half.
Now stir in the coconut milk and a good squeeze of lemon juice.
Stir in 2big handfuls of baby spinach and serve with fresh coriander and some basmati rice.
