Dr Broth Black Bean Burrito

The perfect lunchtime treat.

You will need:

1 x 750ml tub Dr Broth Vegan Broth

1 cup dry black beans – soaked in water overnight.

A couple of your favourite wraps (flour/corn/gluten free)

2 medium sized avos

A few spoons of Greek yoghurt

Some tomatoes and cucumber, chopped and mixed to make a salsa with extra chilli if you like it hot

Grated cheddar or crumbled feta

1 lime

Pinch of salt.

Method:

Drain you soaked bean, rinse them and put them in a pot with the Dr Broth vegan broth.

Make sure the pot is big enough to have some space left over so you can stir from time to time.

Simmer the beans until they are soft.

When they are soft, stir in the juice of half a lime through the beans and set aside while you get ready to assemble your wraps.

Scoop your avos into a bowl and mix roughly with a pinch of salt and the juice of the other half of the lime.

To assemble, open the wrap and spread some avo into your open wrap.

Spoon some beans over the avo.

Dress the beans with some yoghurt, salsa and cheese if you are using.

Wrap it up nicely and it’s ready to go.

If you like you can toast the wrap on all sides in a dry frying pan.
