This deeply flavoured pearl barley can be eaten as a side dish , served cold in a salad, or dressed up, as a dish on it’s own.
You will need:
1 cup pearl barley
1 Tub Dr Broth Vegan Mushroom Broth
Method: In a medium saucepan bring the barley and broth up to a simmer, simmer for about 40 minutes, stirring occasionally until the brothis absorbed, and the barley is soft.
When it is ready you can add some parmesan cheese and some spinach leaves and serve as aside to a roast or braise. With some roast butternut, feta and dukkha spice it’s a great dish on it’s own.
