Salmon with Bone Broth Braised Tomatoes & Toasted Walnuts

This Omega rich dish will have your guests asking for seconds

You Will Need:

Salmon Fillets or if you prefer any oily fish like tuna or mackerel.

1 Tub Dr Broth Ginger Chill Chicken Bone Broth

1 tbls sliced garlic

3 cups chopped tomatoes

½ cup lentils

4 TBLS EVOO

1 cup toasted walnuts

+ - 100g green beans

2 handfuls baby spinach

Juice of 1 lemon

Salt & pepper

Method

Start by simmering the lentils in one cup of Dr Broth bone broth until tender – add more broth or water if necessary In a saucepan over medium heat add 2 tbls of extra virgin olive oil and fry the garlic until golden brown, then carefully add the tomatoes and stir.

Then add 1 cup of Dr Broth and simmer until most of the liquid has evaporated.

Add the green beans and let simmer for 2 minutes Stir in the lentils Add the spinach, walnuts, and lemon juice and taste to see if it needs any salt or pepper.

Use the remaining EVOO to sauté your salmon fillets (season beforehand) or bake or grill if you prefer. Then serve on top of your other ingredients and enjoy this heart-friendly dish.
